Portable Food.....that was the incentive for making the original Scotch Egg many years ago. What is a Scotch Egg.....you can think of it as "Breakfast in your hand". Simply stated it is a hard boiled egg, wrapped in pork sausage, coated in bread crumbs and fried to a golden brown. They can also serve as a great portable snack food.
